A healthy veggie packed chili made with roasted sweet potatoes, bell pepper, tomatoes, corn and fiber rich black beans. The officially first day of fall may still be weeks away but welcome it early this week with this delicious Roasted Sweet Potato and Black Bean Chili! I like to add some frozen fire-roasted corn after it's nearly done cooking, and I like chili a little thicker, so I mash. Chili beans are beans cooked with a ground meat chili sauce.

  5. Put the sweetcorn in a blender with the cheese, juice from ½ lime and a small amount of your favourite chilli (I always use ½ tsp sriracha chilli sauce). Mix for a minute until you have a nice creamy paste. (If you don't have a blender: just serve the toasted sweetcorn and cheese as they are, that will taste just as nice 😋).
  6. Serve with tortilla wraps and creme fraiche or sour cream!

Instead of canned jalapenos, I bought a whole one and roasted it on the gas stove. It added a kick to the dish, but the cheese and sour cream countered that nicely.
